Up your vegetable quota with these three ingredient zucchini pancakes. Serves one.
- 2 eggs lightly beaten
- 1 zucchini
- 3-4 tablespoons of tahini or seed butter
Use a food processor or grater to shred your zucchini. Combine zucchini in a bowl with the eggs and tahini. Add salt and pepper to taste. Mix well. Cook over medium heat using coconut oil or ghee to stop them sticking. Serve with some sauerkraut and avocado. Yummo!
