Today I was feeling inspired to make a super tasty lunch with what I find to be notoriously bland, chicken mince. And I succeeded! So much flavour and so moist! I promise you will love these little guys and the kids will too.
The Most Amazing Chicken Meatballs. Ever.
- 400gm chicken mince
- 2 cups zucchini, grated
- 2 leeks sliced and diced
- 1 teaspoon of onion powder
- 2 teaspoons seaweed salt
- 1 1/2 tablespoons parsley
If baking, skip this step, however if you pan fry this is really important so the meatballs don't fall apart. Squeeze excess moisture out of the grated zucchini.
Line a baking tray with baking paper and set the oven to 180 degrees.
Combine all the ingredients in a bowl and mix well with your hands. Form into meatballs and set on tray. You should end up with around 20 - 24 meatballs.
Bake in the oven for approximately 20 mins, turning half way. Serve in lettuce cups or dip into your favourite condiment like some home made mayonnaise, guacamole or tomato salsa. But seriously these are so tasty you won't need any more flavour.
